Tonight I got home and lit a chimney of lump. While it was lighting I seasoned a smallish pork loin and put it on the Weber rotisserie spit. Banked the coals against one side of the kettle with fire bricks to hold them, then a drip tray under the spit. Tossed some foil wrapped spuds directly on the coals. Once the loin was done spinning and the potatoes and pork came off, then I spread the coals out and direct grilled some sliced zucchini that was tossed in butter. When it came off the pork loin had rested and was ready for slicing.

Homemade bread was the only menu item not prepared over live fire.

I'm going to blow this thread out of the water tomorrow! 8 slabs of St. Louie racks are going on my big smoker tomorrow morning. Photos to follow.

I use to smoke lots back in the day...

simple recipe... makes the meat taste like candy

clamato and italian dressing ... marinate the meat in that over night

We love smoking boneless pork ribs. I can eat and eat them. My wife got me a smoker for Father's Day. I never smoked meat before that. I like it. Taste so good.
Done some whole chickens too. Fall off the bone good!
