I have been doing ribs for the last year or two, and have everyone really happy with them.

But I am going to try something new tomorrow. 4 pound beef roast. A guy I know who is into competition smoking is telling me 275-300 until it reaches 150-155 internal, then wrap it with foil and let it rest for 1/2 hour.

I will let everyone know how it turns out.
